Simple Quesadillas

Only have 30 minutes between classes or meetings? Then this is the recipe for you!!

We usually alternate between Maggi Noodles, leftovers, and these bad boys for lunch. Super easy and customizable. Also, quesadillas are a great intro if you’ve just started cooking!




Ingredients (makes 2 quesadillas. Scale up for more!):

  • 4 Corn Tortillas

  • Mexican Cheese

  • Cotija Cheese (optional)

  • Hot Sauce (this can be Cholula, TJ’s Taco Sauce, Tapatio, Leftover Taco Bell Packets)

  • Oil


Instructions:

  1. Warm up a skillet on medium heat. Once hot, add 2 tablespoons of oil. Let that warm up.

  2. Place two corn tortillas on the skillet. Let those warm up. After a minute or two, flip them. And leave that to warn up for a minute.

  3. Take 2 tablespoons of Mexican cheese and sprinkle it onto one of the tortillas. Be careful not to go all the way to the edge as this will result in cheese everywhere on the pan. Leave about ¼ of an inch’s space around the tortilla. You can add a sprinkle of Cotija cheese now if you’d like.

  5. Take your other tortilla (the one with no cheese) and flip it on to the cheese tortilla. The side that was touching the pan should now be touching the cheese. Your quesadilla should resemble a sandwich at this point.

  6. Press gently on the quesadilla. Leave on stove for 2-3 minute. After, check the bottom. Yo should see some brown spots. I like mine a little crunchy, so I leave it a little longer. Flip and repeat on the other side. Repeat until cheese is melted and both sides have some browning.

  7. Let cool slightly and cut into four pieces with a pizza cutter.

  8. Serve with salsa and sprinkle with some chives.

Add Different Cheeses:

  • Try Pepper Jack!

Add More Inside

  • Madras Lentils: Our favorite thing to do is to add some Madras Lentils inside. These are basically flavored beans/lentils. They make it so much easier to add flavor and protein to the simple quesadilla. But you don’t have to fuss with another pot or burner. Our favorite way is to just rip open the packet, add 1 to 2 tablespoons right after you add your cheese and close that bad boy up!

  • Onions: Add regular diced onions or green onions! Green onions are our favorite. We have bought dried chives. That’s what your see on top. 10/10

  • Avocado: Slice some up and add to the inside!

  • Salsa/Sauce: Add some salsa or a different sauce to the inside an
