I saw this recipe on Pinterest, but I did not like how it came out so I made my own version of it. These are filling and delicious! Substitute the chocolate chips for blueberries, butterscotch chips, or whatever your little heart desires!

Ingredients:
3/4 cup Rolled Oats
3/4 cup Almond Flour
3 Eggs
2/3 cup Oat Milk
1/2 cup Vanilla Protein Powder
1 tbsp Vanilla Extract
1 1/2 tsp Baking Powder
1/2 cup Chocolate Chips
Butter
Directions:
Mix milk, eggs, and vanilla in a glass measuring cup or bowl
Add the flour and rolled oats into a blender or food processor and blend until combined. The oats should look like flour
Empty the flour mixture into a medium bowl and add your protein powder and baking powder
Whisk to distribute
Mix in wet ingredients until thoroughly combined. Do not over-mix.
Heat a medium-sized pan over medium/high heat
Melt a pat of butter onto the pan and make sure it covers a majority of the pan
Spread 1/4 cup of your batter onto the pan
Sprinkle 10 chocolate chips onto the pancake
Cook on both sides for 4 minutes
Enjoy with syrup!
