Protein Pancakes

I saw this recipe on Pinterest, but I did not like how it came out so I made my own version of it. These are filling and delicious! Substitute the chocolate chips for blueberries, butterscotch chips, or whatever your little heart desires!

Ingredients:

  • 3/4 cup Rolled Oats

  • 3/4 cup Almond Flour

  • 3 Eggs

  • 2/3 cup Oat Milk

  • 1/2 cup Vanilla Protein Powder

  • 1 tbsp Vanilla Extract

  • 1 1/2 tsp Baking Powder

  • 1/2 cup Chocolate Chips

  • Butter

Directions:

  1. Mix milk, eggs, and vanilla in a glass measuring cup or bowl

  2. Add the flour and rolled oats into a blender or food processor and blend until combined. The oats should look like flour

  3. Empty the flour mixture into a medium bowl and add your protein powder and baking powder

  4. Whisk to distribute

  5. Mix in wet ingredients until thoroughly combined. Do not over-mix.

  6. Heat a medium-sized pan over medium/high heat

  7. Melt a pat of butter onto the pan and make sure it covers a majority of the pan

  8. Spread 1/4 cup of your batter onto the pan

  9. Sprinkle 10 chocolate chips onto the pancake

  10. Cook on both sides for 4 minutes

  11. Enjoy with syrup!
